I had to read this sentence twice, because the "I … we" surprised me:

   My husband and I eat quasi-vegan two nights a week and I often eat vegan
   during the day because we think it's healthful.

I am not sure how to interpret things like

   … vegan "gelatin" …

and

   … mad cow disease, high intensity farming, travel costs …

I guess these are notes to yourself?
