re: soy whipped cream

If you go soy on the milk and the butter in the sticky spice loaf, I'd suggest going soy on the whipped cream also.

mb:

I ... ummm ... well ... I had no idea that there was such a thing as soy whipped cream. Do you use Silk creamer? Or regular soy milk? Do you just whip it up in the stand mixer the way that you would with regular whipped cream? Or do you have to use a whipped cream maker and NO2?

Teach me, teach me! I would love to know! My best friend is vegan and something like this will come in REALLY handy in my life!

The product I use is called Soy Whip whipped soy topping. The company that makes it is a German firm called Soyatoo! (exclamation point theirs). The company that imports it is called Ceres Organics, of Boulder, Colorado.

It's good enough that I've had vegan guests tut-tutting till they find out it's not dairy.
