recipe by m-c
Here's what I did with the second half of the teff porridge from the recipe for teff wedges.
The porridge had set up like concrete in the pot, but I was confident I
could bring it back to deliciousness. I scraped it into a microwave-safe dish
and doused it with soy milk. (My soy milk of choice is unsweetened
Silk,
the one in the green
carton.)
I nuked it on low for 2 minutes.
Then I crushed the porridge apart with the back of a spoon.
(A fork would be more effective with a larger grain. And this trick works well only with intact whole grains. With grain fractions -- steel-cut oats, for instance, or cracked wheat ‑‑ getting the glop loosened is much more difficult and ultimately less rewarding. Yet another reason to cook with intact whole grains.)
Freeze-dried raspberries from the Just folks and pistachios completed the breakfast treat.
