derived from Sunset Books's Quick Cooking for Two, pp. 26-27
| 1. | tomatoes | 2, cored and cubed |
| fresh mozzarella | 4 oz., cubed | |
| basil leaves | 4 leaves, sliced thin | |
| 2. | olive oil | 1 Tablespoon |
| balsamic vinegar | 2 Tablespoons | |
| anchovy paste | 2 teaspoons | |
| black pepper | to taste |
1. Stir the tomatoes, mozzarella, and basil together in a medium bowl.
2. Stir all the ingredients for the dressing together, then pour the dressing over the tomato and mozzarella mixture and stir once more.
