bittersweet brownies (vegetarian)

1. 70% bittersweet chocolate 6 oz., chopped coarse
  Hershey's Special Dark chocolate chips 2 oz.
  salted butter 6 Tablespoons,
cut into pieces
3. eggs 3 large
  sugar 1 cup (or less)
  salt ¼ teaspoon
  vanilla extract 1 teaspoon
4. white whole wheat flour ⅓ cup + 1 Tablespoon

1. Use a double boiler or a heatproof bowl over (not in) boiling water to melt the chocolate and the butter.

2. While the chocolate and butter are melting, preheat your oven to 350° and grease your 8x8inch brownie pan.

3. Put the eggs, sugar, salt, and vanilla into a large bowl and beat them on high with your hand-held mixer for two minutes. Then stir the chocolate and butter mixture in.

4. Fold the flour in.

5. Pour the batter into the greased pan and bake for 25-30 minutes, or until a knife inserted in the middle of the pan comes out clean.
