| 1. | soba noodles | 6 oz. |
| 2. | cucumber | 1 medium sized, cut into thin strips |
| red bell pepper | 1 medium sized, cut into thin strips |

| scallions | 3 stalks, finely sliced |

| 3. | lemon juice | 2 teaspoons |
| soy sauce | 5 teaspoons | |
| sesame oil | 1 Tablespoon | |

1. Fill a pasta pot with water, bring it up to a full boil, and add the soba noodles. Cook them al dente, around 6 minutes. Drain them and rinse them with cold water.
