sesame soba noodles (vegan)

1. soba noodles 6 oz.
2. cucumber 1 medium sized,
cut into thin strips
  red bell pepper 1 medium sized,
cut into thin strips
  broccoli 1 small head,
cut into florets
  scallions 3 stalks,
finely sliced
3. lemon juice 2 teaspoons
  soy sauce 5 teaspoons
  sesame oil 1 Tablespoon
4. toasted sesame seeds ⅓ cup

1. Fill a pasta pot with water, bring it up to a full boil, and add the soba noodles. Cook them al dente, around 6 minutes. Drain them and rinse them with cold water.
