lemony salad recipe (vegan)

1. lemon 1, peel and pith cut away
  garlic scapes 2, roughly chopped
  scallion 1, roughly chopped
  cilantro 1 small handful, chopped
2. olive oil 5 Tablespoons
  salt to taste
3. green leaf lettuce 1 large head
  radish 2, sliced thin
  hakurei turnip 1, sliced thin
  summer squash 1, chopped
  zucchini 1, chopped

1. Chop the lemon into several pieces and put them into the food processor along with the garlic, scallions, and cilantro, and process them to a thin paste.

2. With the processor still running, add the olive oil and salt.

3. Wash and dry the lettuce, tear it into pieces, and put it into a large bowl with all the other vegetables.

4. Serve the salad undressed so that each person can choose the right amount of dressing for themself.
