| 1. | lemon | 1, peel and pith cut away |
| garlic scapes | 2, roughly chopped | |
| scallion | 1, roughly chopped | |
| cilantro | 1 small handful, chopped | |

| salt | to taste | |
| 3. | green leaf lettuce | 1 large head |
| radish | 2, sliced thin | |
| hakurei turnip | 1, sliced thin | |
| summer squash | 1, chopped | |
| zucchini | 1, chopped |
1. Chop the lemon into several pieces and put them into the food processor along with the garlic, scallions, and cilantro, and process them to a thin paste.
2. With the processor still running, add the olive oil and salt.
3. Wash and dry the lettuce, tear it into pieces, and put it into a large bowl with all the other vegetables.
4. Serve the salad undressed so that each person can choose the right amount of dressing for themself.
