| 1. | fresh gooseberries | ½ cup |
| 2. | special simple syrup [see below] |
3 Tablespoons |
| half-and-half | ½ cup | |
| orange flower water | 2 drops |
1. Pick the flower ends off the gooseberries.
2. Put the fruit, the syrup, the half-and-half, and the flower water into your blender and puree them.
3. Use the puree to make ice cream according to the directions for your ice cream maker.

| salt | 1 small pinch |
1. Put the sugar, the water, and the salt into a pot and heat them up till the liquid is clear, 5-6 minutes.
